At "Tokuyama Sushi"
"Heshiko" is a traditional fermented dish of "Hokuriku" area (Fukui Pref., Ishikawa Pref., Toyama Pref. and northern side of Biwako Lake in Shiga Pref.), that made of various fishes fermented with rice bran. They are precious preserved foods or the sources of protein in winter for the people who live in this area that snow very much. This dish is very delicious, but very salty (so that people can have many bowls of rice with it). It's good for the food for drinking, or having with slices of radish.
