Known to all of Japan, people living around Nagoya have their very specific habit of living. They costs very much of money for marrige party, have a cup of coffee with "Arare", that is a japanese rice snack, playing "Pachinko" every day, and also cook many dishes with "Miso", the Japanese traditional soy paste. They put "Miso" into several dishes like cutlets, ramen, and this "Nikomi-udon", the Japanese pasta. But somehow, they've been known to famous taste of Nagoya.
